Are these recipes authentic?

They're home versions inspired by how each dish is made on the street, adapted for ordinary kitchens and widely available ingredients. Each recipe explains where the dish comes from and where we've made changes.

Can I make street food ahead for a party?

Many components can — chutneys, potato fillings, marinades and momo filling all keep well chilled. Each recipe has party notes on what to prepare ahead and what to finish just before serving.
